Chef Evan Funke is a steward of Italian cooking traditions and culture. Tre Dita is his love letter to Tuscany, drawing inspiration from the cuisine of Florence, Lucca or Livorno and more. At the heart of Tre Dita is Chef Funke's pasta laboratorio. Made daily, centuries-old pasta shapes are meticulously handcrafted, preserving tradition with each precise movement.
