Wildfire in Lincolnshire Turns 25

Classic dishes make a comeback June 21-25

This June, Wildfire – Lincolnshire celebrates 25 years of sharing great food and fun in Chicago’s north suburbs! This neighborhood gem has welcomed more than 5 million guests and hosted countless celebrations over the last two and a half decades—including an estimated 300,000 birthdays—so to mark their own special 25th anniversary, the restaurant is bringing back a few signature dishes from the original menu for a limited time.

Take a trip down memory lane with some of Wildfire – Lincolnshire’s longest serving employees below, and get ready to make new memories with these classic dishes making a comeback for dine-in, carryout and delivery from Tuesday, June 25- Friday, June 28.

Spinach & Artichoke Fondue

“I was the first server ever hired here and I’ve been here ever since. Some say I came with the building,” jokes host/server Stacie Portnoy. Among the first dishes she served? Spinach & Artichoke Fondue, a staple appetizer from the original menu, topped with white cheddar and asiago cheeses, baked until golden brown and served with toast points.

“My favorite memory at Wildfire – Lincolnshire is when my husband proposed to me at table 33 in front of my two young boys,” Portnoy shares.

Mushroom & Smoked Bacon-Stuffed Atlantic Salmon

“So many of our Wildfire – Lincolnshire guests have been coming here for 25 years, week after week, year after year, and it’s become a family for them and a family for us,” says Wildfire President Howard Katz, who’s worked with Lettuce Entertain You Restaurants for 42 years. 

Many of these loyal guests will fondly remember the Mushroom & Smoked Bacon-Stuffed Atlantic Salmon, which was a beloved Friday night-only special for years. Making a comeback for the 25th anniversary, the salmon is stuffed and roasted in the oven, served with a red wine butter sauce and your choice of side.

Horseradish-Crusted Cherrystone Clams

Wildfire isn’t afraid to get creative, as shown in this original guest favorite, Horseradish-Crusted Cherrystone Clams, for which the clams are steamed, then chopped and put back into the shell, then topped with a horseradish crust and baked until golden brown.

That creativity carries over to the countless parties that Wildfire – Lincolnshire has hosted in its eight different private dining rooms. “I remember a party where the entire restaurant was bought out and we had ice sculptures and stations set up throughout the restaurant,” recalls server Rose Mocchi.

Chocolate Banana Bread Pudding

“I threw my dad’s 80th birthday party here and he will soon be turning 99. My husband threw my own 60th birthday party here. All of my co-workers were able to be a part of these special milestones with me,” says longtime server Bernie Stark.

Sweet celebrations are indeed a Wildfire specialty, from Key Lime Pie (Wildfire – Lincolnshire has served 120,000 over the last 25 years!), Door County Cherry Pie and Triple-Layer Chocolate Cake, to this Chocolate Banana Bread Pudding, a throwback making a triumphant return, topped with sliced bananas, caramel sauce and fresh whipped cream.

“What I’ve loved about working at Wildfire – Lincolnshire is the flexibility. When my kids were little, I was able to be a present mom due to the flexible work schedule I was allowed,” Stark says.

The kitchen at Wildfire – Lincolnshire has turned out more than 1 million signature Wildfire Chopped Salads, Filets and 3-oz. Steak Medallions each over the last 25 years, with other dishes including Cedar-Planked Salmon, Bison Meatballs and BBQ Baby Back Ribs and more becoming new classics.

Cheers to a milestone anniversary!

Wildfire – Lincolnshire’s faithful fans—many of whose names appear on silver plaques lining the walls of the restaurant—are what the team cherishes most. “I feel that our guests are very loyal. We have such nice people that come in to see us.  I have really great regulars,” says longtime server Dawn Dominguez.

“We’ve all grown over the years together.  I’ve seen my coworkers’ children grow up and [make them] grandparents,” Dominguez says. “So many milestones shared together.”
